You think I’m kidding? I’m not.  My sweet and spicy venison jerky recipe won Grand Champion at the County Fair in the entire canning and preserving class.

Make the best homemade jerky recipes that will win championships. Homemade sweet and spicy venison jerky marinade.

There is little I like more than homemade jerky. Seriously, it’s really the perfect food. It’s high in protein, low in carbs (a good thing for me) it’s tasty, lasts a long time and is just AMAZINGLY fantastic.  I hoard my jerky. Literally. I guard it passionately.

But, I will share my homemade jerky marinade recipes and process so you can make your own. There really isn’t any magic to the process, and like any recipe, it can be tweaked to your individual taste.

How to Make Homemade Jerky

The process of making homemade jerky takes about three days. Two days to slice, prepare, and marinade and one day to dehydrate. But it’s well worth it!

Step 1 – Select your meat: The best meat for jerky is lean with little fat. My husband saves me the rumps, and he uses the shoulders for his ground venison jerky.  If you are making beef jerky then the best meat for beef jerky is a nice large rump roast or round roast.

Step 2 – Slice meat 1/8-1/4″ thick. Half frozen meat will slice easier

I used to hand slice beef for jerky, and that works. But, your hand gets very tired after about 15 minutes. If you are making homemade beef jerky and buying a beef round roast from a meat case you can ask the butcher to slice it for you. There are still a few full-service grocery stores around. They usually have the best meat too.

The best and fastest way to make a large batch of jerky is with a high-quality meat slicer. The Chefs Choice 610 Slicer some of the best reviews. We received our slicer as a Christmas gift a couple of years ago and it’s WONDERFUL!! If you’re going to make jerky on a regular basis then invest good kitchen equipment and tools to do the job.

Step 3 – Place Slices into a deep storage container. Crisscross them leaving gaps where marinade travel and do its magic

Step 4 – Pour prepared jerky marinade 

Repeat steps 3 and 4 until the container is full. Then press the meat down and make sure it’s covered in the jerky juice marinade.

Step 5 – Marinade in the refrigerator for 24-48 hours

Step 6 – Dehydrate on high (160F) for approximately 4-6 hours

Lay your marinated jerky meat on the dehydrator trays close together. It will shrink as it dries. Depending on the thickness of your jerky and how much jerky marinade juice it soaked up will determine your drying time. You want the final product to be dry, but not too dry. It should bend just slightly without breaking. BUT, if it does get drier that’s okay too. It will still taste great. In fact, it will last longer as you have to suck on it longer to eat it.

Step 7 – Eat and Enjoy! Be prepared for friends coming out of the woodwork asking for jerky. Giving you meat to make into jerky, loaning you their dehydrators because they can’t make it as good as you do. Yes, it’s happened. I put their dehydrator in the garage and use mine.

The Best Dehydrator for Jerky

Seriously, the best dehydrator for jerky is the Nesco Gardenmaster Dehydrator.  Don’t use any other kind. I have tested about 5 different ones, you will be VERY disappointed if you use any other brand.

The heater and fan are on TOP of the Nesco Gardenmaster Dehydrator, which is VERY important. This pushes warm air down through the center tunnel and racks assuring an even airflow. There is no need to rotate racks. The jerky dries evenly. Our Nesco dehydrator is going on fifteen years old and is still going strong. Really any of the Nesco professional dehydrators will do a good job.

Don’t skimp on a jerky dehydrator. If you find a “bargain” with a heater or fan on the bottom, walk away. Think about it, you don’t want the jerky marinade to drip on the heating unit.

Packaging Jerky – Bags and Labels

Normally I use freezer quart bags and store my jerky in the deep freeze. It is rare that I give away my homemade jerky. But occasionally I do put them in my Christmas baskets and boxes. It’s then that packaging is important.

This is label can be ordered on Etsy and I’m sure you can ask the artist for a venison jerky label too.

Homemade Jerky Recipes

My best deer jerky marinade recipes start with a base blend. I then adapt it depending on what I feel like.  I started with the Sweet and Spicy Venison jerky and spun off from there. A lot of this has been experimentation, but without fail it came out delicious every time.  The base blend of marinade will cover approximately 4-5 lbs of meat.  If you have marinade leftover that you haven’t used store it in the refrigerator for your next batch.

Venison Jerky Marinade: (Base )

  • 30 oz Worchestire Sauce
  • 15 oz Soy Sauce
  • 2 TBSP Garlic Powder
  • 1 TBSP Lowry’s Seasoning Salt
  • 1 TBSP Onion Powder
  • 1 TBSP Black Pepper
  • 1 tsp Liquid Smoke

(Championship) Sweet and Spicy Venison Jerky

  • Base Blend
  • 1/4 Barbeque Sauce
  • 1/4 Honey
  • 1 TBSP Chilli Powder

Teriyaki Jerky Recipe

  • Base Blend
  • 10 oz Teriyaki Sauce
  • 2 TBSP Crushed Garlic

Venison Sweet Hot Jerky Recipe

  • Base Blend
  • 1/4 barbeque sauce
  • 1/4 cup Jalapeno Jelly (I use my own recipe)
  • 1 TBSP Chilli Powder

Spicy Hot Jerky Recipe

Now I’m warning you if you do NOT like hot and spicy then do NOT try this! 

The longer you marinade this the hotter the jerky. Let this sit for two days and age.  I don’t like super hot jerky, heck I don’t even like hot jerky. When I licked my fingers after I got some marinade on my fingers it set my lips on fire. I much prefer my Sweet and Spicy Venison jerky more. The chili powder is just enough for my tastes buds.

  • Base Blend
  • 1 TBSP Chilli Powder
  • 2 TBSP Habanero Pepper Flakes
  • 2 TBSP Daves Gourmet Scorpion Pepper Hot Sauce

Cabela Jerky Recipe

Since I live in Nebraska a lot of people ask me if this is the Cabela jerky recipe. I’ve tried it. But, I like mine better mainly because of the liquid smoke and the garlic.  But if you have been searching for the Caela jerky recipe here it is for you to try.

  • 3 lbs venison (or beef)
  • 1/2 cup soy sauce
  • 1/2 cup Worcestershire sauce
  • 2 tsp Accent seasoning
  • 2 tsp table salt

Yup, I said it vinegar. When you add vinegar in the wet ingredients to the baking soda in the flour mixture it becomes baking magic. Ok, not magic, but baking science.

  • 3 large eggs
  • 3 Ripe bananas
  • 3/4 Cup Almond Flour
  • 1/2 Cup Blueberries (frozen or fresh)
  • 1 tsp baking soda

  1. Preheat oven to 350F, grease muffin tins (I spray with Pam, it’s easy and fast)

Why is Supporting Agriculture Education is Important? How Can You Help?

When I think of food I think of the farmers, ranchers and livestock producers who work every day to provide healthy and nutritious food. I also think of the millions of people who DON’T understand where the food in their grocery store begins. Nor do they grasp how many millions of people are involved in providing easily available, healthy, nutritious food.

When an opportunity to write a sponsored post about Farmland products and their partnership with the National FFA Organization appeared through the Mom It Forward Influencer Network I jumped at the chance. Not only do I love to cook (see my Ham Croquette recipe at the bottom) but I have a personal connection to agriculture and feel supporting agriculture education is extremely important.

How FFA Prepares Students for Life, Not Just Agriculture

The National FFA Organization plays an important role in defining the future of agriculture.  Students learn animal science, agronomy, and horticulture through their integrated high school FFA classes and projects. But it’s more than just the practical agricultural education applications.

There is 250 career focus areas students can explore to prepare them for the workforce.The organizations’ historical name was “Future Farmers of America” and has changed as agriculture is redefined.  The future of agriculture is more than just production farming.  Agriculture includes veterinary medicine, landscape architecture, horticulture and many other fields.

I watch the younger generation smile with pride at county fairs as they exit a show ring with their steer. The projects they take to state or National FFA conventions amaze me.

Kates Mom sent me the photo above. Not only did Kate show goats in FFA but she was also a state officer, participated as a State officer and was extremely active in extracurricular events in school. In fact, the high school Kate attended did not even have an FFA program. Kate took the extra effort to participate in a neighboring schools program so she could be a part of the National FFA Organization.  This is the type of dedication and motivation that will bring her far in whatever career field she chooses.

My Favorite Ham Croquette Recipe

Ingredients

  • 1 1/2 C Farmland boneless ham
  • Cold Mashed Potatoes (cooked fresh and chilled – or use leftovers)
  • 1/2 Onion
  • 1 1/2 Cups Flour
  • Crushed Ritz crackers
  • 2 Eggs
  • 1 C Milk
  • Salt & Pepper to taste
  • Vegetable Oil

Directions

  1. Use leftover Farmland boneless ham from dinner, or buy the “easy” to use Farmland Diced Ham (which is also great for omelets)
  2. Mix Farmland Diced ham, mashed potatoes, onion, ONE egg, 1/2 cup flour in large bowl (it will be thick)
  3. Whisk milk and ONE egg in shallow bowl
  4. Blend 1 cup flour with crushed crackers and salt and pepper (to taste, you can omit salt, I like more pepper, I add 2 tbsps)
  5. Shape croquettes in the palm of your hand the shape of 4-5 inch logs 2-3 inches thick (it will be sticky, coat your hands in flour often)
  6. Roll in milk and egg mixture, then liberally roll in flour and cracker crumbs
  7. Heat 1″ of oil in frying pan to about 350 (or until a test drop of flour “sizzles”)
  8. Place croquettes in a pan and carefully brown on all sides, reduce heat to medium, cover and cook for 15 additional minutes.

Inside should be “cooked” and hot.

Make Homemade white gravy to top it off

Nothing is better than homemade white gravy poured over ham croquettes and the recipe is easy. There are no “real measurements” for making this gravy, it is all about feel and technique.

  • (about) 2 Tablespoons butter
  • (about) 2 TBSP flour
  • (about) 1 cup milk

To make white milk gravy melt butter over medium heat in a saucepan. When melted add flour and whisk until hot, gradually add milk whisking all the time. Raise temperature until boiling whisking until smooth.  Season with salt and pepper. This is the same white country gravy recipe used for country fried steak and biscuits and gravy.

My Favorite Turkey Stuffing Recipe

Some foods I cook from scratch, other have a little bit of help, and I deviate from the script. My favorite turkey stuffing recipe varies every year, depending on what I have in my refrigerator and cupboards. But regardless, it always comes out delicious and there is never enough for left over “turkey plates.”

How to Dress up your Turkey Stuffing
Start with Stove top Stuffing as a base

Start with Stove Top Turkey Stuffing Mix

Yes, it’s cheating in a way, but I’m brand loyal and Stove Top stuffing has amazing flavor, the seasonings are already mixed in so I don’t have to guess. But I don’t stop there, I chop 3-4 of the following added ingredients and add them to the pot.

Just follow the ingredients on the box.

  1. Add water and butter to a large saucepan, bring to a boil.
  2. Turn off burner
  3. Add breadcrumbs from box
  4. Remove from heat
  5. Add 1-2 cups “EXTRA” ingredients and quickly mix with fork
  6. Cover and let sit for 30 minutes

Stuffing Additives

  • Onions
  • Celery
  • Mushrooms
  • Dried cranberries
  • Apples
  • Dried cherries
  • Walnuts
  • Chestnuts

I normally add about a 1/4 cup of each ingredient to my turkey stuffing, notice I said ABOUT, I don’t measure I just chop until it looks good. If you don’t like apples, leave them out, but it does give a nice sweet flavor to the stuffing. They cook down soft, so most people don’t even notice.

 

Baking Your Turkey

Homemade turkey stuffing recipeYes, there is a debate on whether you should bake your stuffing inside the bird or separately. This is mainly due to “safety” reasons. I bake my turkey with the stuffing inside, the turkey drippings add an amazing flavor which unmatched by just stove top cooking.

What is important to remember is to fully cook your turkey, then when you think he’s done, leave it in for 15 more minutes. Since I only use a giant roasting pan once a year I don’t own a “real” metal roaster. I buy the disposables at the grocery store and reuse them to make Chex Mix for the Christmas season. I do have a “real” metal baster though. Plastic turkey basters have a way of somehow touching a really hot service and getting a hole burned into the syringe. Then they don’t work.


Back to the stuffing. Use a large serving spoon and pack the stuffing inside the main body cavity and under the neck flab, just lift and tuck, lift and tuck. (Sounds like an exercise doesn’t it)

Place frozen pats of butter under the skin

Lift the bird and spoon the stuffing way down inside the body cavity. Pack it full. If the stuffing is sticking out the back end of the turkey, that’s ok. It will get nice and crispy and is perfect for snacking on when you take the turkey out of the oven.

 

After all of your stuffing has disappeared into the turkey, then proceed to season the outside, slip some butter under the skin and cover with bacon. Yup I make a bacon wrapped turkey. If you’re into that type of thing.

I should fix more stuffing throughout the year. Turkey stuffing isn’t just for Thanksgiving and there are a lot of recipes to use with chicken and pork chops. Maybe I’ll venture beyond just stuffing at Thanksgiving.

How to make a bacon basted turkey for thanksgiving

Given the time I love to cook, and Thanksgiving is the perfect time to break out traditional recipes like my Bacon wrapped turkey recipe.

I roasted my turkey with bacon way before bacon was cool. I watched my Dad obsess over his turkey when I was little and this started a family tradition.

You can have your fried turkeys, slow cooker turkeys, and your precooked turkeys. I like my Thanksgiving turkey oven roasted and the whole process becomes an event.

I’ve even baked my Thanksgiving bird in a roasting bag a few times just to try it, but it’s not near as good. Thanksgiving was my Dad’s Favorite Holiday

You have to know that my Dad didn’t really cook much, but Thanksgiving was his holiday and he loved fixing and carving the turkey. I only bought a Butterball pre-basted turkey once, and that was enough, it wasn’t near as moist.

The Best Turkey Baste is a Combination of Butter and Bacon

The secret to a juicy turkey is lots of juice, basting frequently, and not letting the bird sit in the oven and get dried out. Eat it less than an hour after it comes out of the oven.

Best Roast Turkey Recipe Ever

Seriously, even people who don’t like turkey will love this, it is indeed the best roast turkey recipe ever!

  • Large Turkey
  • 1 lb bacon
  • 1 lb frozen butter (1-2 sticks under skin, 1-2 sticks for stuffing)
  • Powdered Sage
  • Poultry Seasoning
  • Seasoning Salt
  • Prepared stuffing (I always stuff my turkey and have the best turkey stuffing ever)

Turkey Roasting Instructions

  1. Preset oven to 325 degrees Fahrenheit
  2. Rinse and remove the packaged giblets from inside the bird (neck & leg opening)
  3. Place turkey in large roasting pan
  4. Slide frozen pats of butter under the skin as far as you can reach on both sides (an inch apart)
  5. Spoon stuffing into body cavity and under the neck flap (pack it in)
  6. Season turkey with sage, poultry seasoning, and seasoning salt
  7. Cover turkey with strips of uncooked bacon
  8. Cover roasting pan with lid, or tinfoil
  9. Place in oven and bake for 12 minutes per pound of turkey

How Long to Cook a Turkey

There are a lot of rules of thumb on how long to cook a turkey, but like my Dad taught me, 12 minutes per lb at 350F.

Many cooking experts recommend 10-13 minutes per pound, but remember, I open the oven door a LOT for basting. So my 24 lb turkey will take about five hours.

Basting is very important to get a juicy and moist turkey.

When the turkey is about halfway done, or as the liquid starts to accumulate at the bottom of the roaster start basting. The bacon fat and butter will melt, soak into the turkey and collect at the bottom of the pan. What a waste.

Pull back the tin foil, and use a large turkey baster to suck up the juice and squirt it on top of the turkey.

Yeah, just suck up all the yummy buttery bacony (is that a word) goodness and pour it over the skin of the turkey, making sure to cover the breast, legs, and even the wings.

BASTE EVERY 30 MINUTES

This is important. Set the timer. You have to babysit the bird. This is when my Mom would start saying “The turkey is never going to cook if you keep opening the oven door!”

Well, the turkey cooks. You might have to add another 20 minutes to the time, but when the turkey is a nice brown, golden color and the bacon crisp and crunchy it’s done.

If you really want to know when your turkey is done you can use a cooking thermometer and when it reaches 160F it’s done.

My Mom’s way of telling is to “shake the leg”, if it shakes back it’s done, or if it falls off, it’s done. When the legs start to sag away from the bird it’s also done.

There is nothing better than a bacon basted turkey at Thanksgiving. Remember the cook gets to pick the bacon and turkey before it’s served.  

Many turkeys have pop-up thermometers and you can use them as a guideline to when your turkey is done, but if it looks like the photo above, it’s done.

Remove it from the oven and let it sit for 15-30 minutes. The meat will continue to cook and you when your biscuits or crescent rolls are done it’s time to eat. At my house we don’t eat at a certain time, we eat “around 1:00 pm” or whenever the bird is done. After opening the door several times for baking the aroma starts to draw people to the kitchen and dining room.

You can then assign volunteers to set the table, place the mashed potatoes in bowls, and pour the drinks. Enjoy your Bacon Basted Turkey and if you have any Thanksgiving traditions I would love to hear them!

Where to Buy Your Turkey

I normally purchase my turkey from the grocery store, I get a plain turkey, not the Butterball variety or their copycats.

Occasionally I have purchased a local farm-raised turkey, but those actually tend to be too big for my oven. One year we had a 28 lb turkey!! Leftovers for months.

You can, unbelievably buy an organic farm-raised turkey for Thanksgiving online and have it delivered right to your door.

For those who live in the city and don’t have a car, I think this would be ideal. I can’t imagine my son lugging a 20 lb turkey on the Chicago CTA train.
