Do Peanut Butter Kisses Cookies Count as Christmas Cookies?

Easy Peanut Butter Kisses Cookie Recipe

Peanut Butter Kiss Cookie, peanut butter kiss cookies recipeStarting in the beginning of December I start baking cookies, lots of cookies. Now Peanut Butter Kiss cookies don’t look like Christmas cookies, but they are one of my kids’ favorites, so they get made every year.

This is a quick peanut butter cookie recipe you can quickly mix and bake. 

I then pack them in cookie tins and mail cookies to friends and family all over the United States.

How to Ship Cookies for Mailing

The best way to pack cookies for shipping is tight and snug so they can’t move around. I use tissue paper and line cookie gift tins. The I fill the tins and use the tissue paper to fill in the empty spaces around the treats. Everyone tells me they arrive just fine.

I usually make at least six different varieties of cookies every year, not including my candies. This tradition started when I moved from Connecticut to Oklahoma for school and was looking for an inexpensive gift to send to friends.

Another reason I started making peanut butter cookies is one year I ran our of flour and these have three ingredients: peanut butter, sugar, and an egg. So not only inexpensive to make is also a simple gluten free cookie recipe for a friend who is gluten intolerant.

Recipe for Peanut Butter Kiss Cookies

I have my favorite Pampered chef baking pan that LOVE to bake cookies on. WHY? The baking stone evenly bakes the cookies and doesn’t over brown the bottoms. Most metal cookie sheets get too hot and the bottoms of the cookies burn too easily.

Preheat oven to 350F, unwrap candy kisses

  • One Cup Peanut Butter ( I use smooth)
  • 1 Cup Granulated Sugar
  • Large egg (1)
  1. Mix together, roll teaspoon-size balls, I use a melon scoop for uniform size balls
  2. Place on cookie sheet and bake for 10 minutes
  3. Remove cookies from oven and immediately place an unwrapped Hershey Kiss into the cooked ball.
  4. Cool slightly and remove from baking sheet.
  5. Place on wire cookie rack until completely cool.

It’s Sugar Coma on Day 4 of Christmas

Cookies, cookies and more cookies. Starting around Thanksgiving I start stocking up for my cookie marathon for Christmas. It’s a tradition to bake at least six different kinds and mix it up with chocolate covered pretzels and chex mix.

For 25 years I’ve made cookies to share and give as gifts. It’s what my kids know and have come to depend on during the holidays. This was especially evident in the excitement I heard as my youngest Marine Corp opened his care package the week before Christmas.

I took a full container  to work (Hamilton Color Lab) everyday the week before Christmas to and shared them with my co-workers and customers. Every night I came home with an empty container.  I swear some customers came in just for the cookies. Which made my day!

Peanutbutter Kiss cookies

This is the easiest recipe you will find, and I should really make them year round, but then they wouldn’t be so special around the holidays.

Ingredients (I believe this is even gluten free)

  • 1 cup peanut butter
  • 1 cup sugar
  • 1 egg
  • Hershey kisses

Directions

  1. Combine the peanut butter and  sugar. Add egg and mix well.
  2. Mixture will will thicken as it sits but can be refrigerated to ease handling
  3. Roll into 1″ balls
  4. Bake at 350F for 8 minutes (this results in a really nice soft cookie)
  5. Remove from oven and press a Hershey Kiss into the middle
  6. Let set on cookie pan and remove to rack to cool
  7. The chocolate will soften from the heat of the cookie but will return to it’s normal consistency within a few hours so give them some time before packaging or bagging.
