Low Carbs Blueberry Muffin Recipe
So here it is. Get ready, it’s pretty easy. You will always want to stock bananas and frozen blueberries in your freezer. Or fresh if they are in season. They are one of the low carbs, no sugar snacks diabetics can eat since blueberries are on the low glycemic food list.

Ingredients
- 3 large eggs
- 3 Ripe bananas
- 3/4 Cup Almond Flour
- 1/2 Cup Blueberries (frozen or fresh)
- 1 tsp baking soda
- 1 tsp white vinegar
- 1 tsp vanilla (optional)

- Preheat oven to 350F, grease muffin tins (I spray with Pam, it’s easy and fast)
- Mash bananas in a medium bowl
- Add eggs one at a time and mix
- To wet ingredients, add vinegar and vanilla
- Add baking soda to almond flour, blend and whisk
- Fold flour mixture into wet mixture (this means DO NOT beat, gently mix)
- Fill muffin tins 3/4ths full
- Press blueberries onto the top of the muffins
- Bake for 20 minutes
