The Simple Cucumber Sandwich

A simple cucumber sandwich was one of my Dad’s favorite summer treats. This wasn’t a dainty sandwich typically served at tea parties as an appetizer, but a hearty manly sandwich with substance.

Making a sandwich was an art with my Father. He would slowly peel the cukes, slice them lengthwise, spread mayonnaise (had to be Hellman’s) then liberally sprinkle with salt and pepper. Then he would share with me. The middle of the sandwich was my favorite. I didn’t like the crust. To this day, I eat the crust first and save the tasty inside last. Don’t ask how I do it, it’s a process, yes I’m weird.

I still love cucumber sandwiches with mayo, always Hellman’s mayonaise, it was, and is, a tradition in my house and like many brand loyalty traditions (Crest, Prego, Zest etc) I will NEVER use Miracle Whip. Yuck.

How to Prepare Corn For Freezing

It’s the start of the sweet corn season and I really need to make room in my freezer. Our first batch was 18 dozen ears. I’ve been putting up sweet corn ever since I was little and shucked corn in the garage with my Mom.  It’s easy, shuck, brush off the silk with a handy little brush, rinse and put in bags.

I’ve heard that some people boil, cook, blanch, add sugar, salt etc. But there really isn’t a need for the extra work. Even nine months later corn on the cob taste just like it was picked out of the field.

It doesn’t take long before my freezer is too full and I have to start cutting corn kernel off the cob and bagging loose corn. I use a bundt pan, put the ear in the middle and it falls right in the bowl. Easy and fast, although with an electric knife it would be even faster.

For those who are scared of knives, or would like the kids to help shuck and strip corn there are safer tools than a big ‘ole honking knife.

But it’s Not nearly as fast as using a power drill McGyver style like below. Since I’m a little intimidated by power tools, I think I’ll stick to my method. But if you have a motivated man in the house this might be a way to get him to help out with the canning.

I rinse the kernels afterwards and let any silk and small pieces float to the top. My daughter loves to eat the pieces of sweet corn that stick together in chunks raw, very tasty and it’s tempting.

Now I have sweet corn in the freezer all winter and corn on the cob to enjoy all year round, just pass the butter, salt and pepper. We were lucky this year and a local farmer told us to just go on over to his sweet corn patch and take all we wanted. He had about an acre planted and shares it with family and friends.

I have a small chest freezer full of corn and I should buy stock in Ziplock bags.

Since we love corn in our house it will definitely save on the grocery bill this year. Between my green beans from the garden and corn we will be pretty well set.

I never knew that broccoli fresh from the garden could taste so good. This was our first garden together, and it’s pretty successful. So far we’ve harvested radishes, lettuce, potatoes, cucumbers, a few beans and zucchini. Our most successful has been the broccoli, didn’t know the plants got so big, but well worth the space.

My Mother-in-law suggested I soak the heads in salt water to clean out any bugs. However, we didn’t have any problems with bugs, not one floated to the top. An added benefit to soaking is the increased flavor.

I steam my broccoli, el dente, to a bright green still a little crisp, but making the florets nice and tender. Put a pat of butter and cracked pepper on top. It’s literally a fight to the last spoonful.

Recipe for Chocolate Covered Cherries that Taste Amazing

Anything covered in chocolate is divine, and chocolate cherries were my Dad’s favorite candy.

Enjoy my recipe for gourmet chocolate covered cherries in honor of National Chocolate Day, National Candy Day, or Valentines Day (hey you pick, I don’t need an excuse for chocolate)

You don’t rush making these chocolate candies, the process of rolling the cherries and dipping takes time.

The Best Recipe for Gourmet Chocolate Covered Cherries

Ok, this is not my “own” recipe, but one I found on AllRecipes.  But I have a few secrets in making the process faster and easier.

The first is buying quality ingredients, which means no skimping on chocolate and using “real” butter and sugar.

  • 30 Royal Harvest maraschino cherries (one jar)
  • 3 tablespoons butter, softened to room temperature
  • 3 tablespoons corn syrup
  • 2 cups sifted confectioners’ sugar
  • 1 pound chocolate confectioners’ coating (I use Ghiradelli melting wafers)

Ok, there isn’t a secret to making chocolate covered cherries, just a few tips. First, gather your supplies. You will want to use really good chocolate.

If you’re going to go to all the effort why use plain almond bark. So get yourself some Ghiradelli Melting wafers, and try not to eat them during the process.

The best chocolate melting method is double boiler!

Why, because perfect melting chocolate needs to melt slowly, not under high heat in a microwave. If chocolate gets too hot it then congeals and gets lumpy. You don’t want lumpy chocolate. Put about an inch of water in the bottom pan and set your burner to medium. The water should not boil.

Then when you are ready to wrap and package to it to impress with red candy foils and cute little candy boxes.

How to Make Chocolate Covered Cherries

  1. Drain cherries and set on paper towels to dry. (liquid will also lump chocolate
  2. In a medium bowl, combine butter and corn syrup until smooth.
  3. Stir in confectioners’ sugar and knead to form a dough. Chill to stiffen if necessary.
  4. Next, pinch off a teaspoon bit of dough and roll into a ball. Flatten in your palm
  5. Wrap each cherry in about 1 teaspoon of dough. Gather the excess sugar dough on the ends and pinch off. You want the thinnest layer of sugar paste around the cherry without any juice seeping through
  6. Place on waxed paper or parchment paper and place in the freezer to chill for one hour or until firm.
  7. Melt confectioners’ coating in a heavy saucepan over med heat. (see above)
  8. Dip each cherry and place on waxed paper lined sheets.
  9. Chill until completely set (trying not to eat them in the process)
  10. Wrap in candy foil wrappers
  11. Lastly, store in an airtight container in a cool place.
  12. Best after 1 or 2 weeks when the sugar paste melts and merges with the cherry juice. (yeah, if they last that long!)
Make chocolate covered cherries at home. This chocolate covered cherry recipe is perfect for a couples Valentines gift to each other. Or make as a special Galentines gift to yourself.

Don’t have the patience, or time, or ambition to try them yourself, then you can buy gourmet chocolate covered cherries and no one will complain. They make a great gift for Valentines Day, or just as an indulgent candy treat.

Day 209/365: Grilled Yellow Zucchini

I’m the first one to admit that I don’t like yellow and green mushy vegetables. This includes squash, asparagus, and zucchini. But on the prompting of my good friend Beth, and my daughter who is a good sport about trying new foods, I have decided to expand my horizons. Nelson Farms is helping a great deal as they have a produce stand set up in the parking lot where I work all summer.

These were so pretty at the stand I just had to pick up a few and try grilling them. Because everything taste better grilled.

So, if I’m going to grill I’m going to use my new Pampered Chef grilling basket. Not knowing which way to slice these veggies, I tried the circles and lengthwise. After digging through my spice cabinet I picked two out, a vegetable supreme and a Mrs. Dash Tomato, Basil and Garlic mixture. Wasn’t sure what would be best so I just experimented by adding the herbs to some olive oil and coating both sides of the sliced zucchini.

Doesn’t it look delicious? I even impressed myself.  Still not too much of a fan of the mushy factor, but I did like the long skin side pieces. My son thought they tasted like weird tasting eggs, he wasn’t a fan. But I ate them all and would try them again with different seasonings.

Anyone have any ideas with what else to do with yellow zucchini?
