4th of July Fireworks

What do you think of on Independence Day, or the 4th of July? Do you think of fireworks, picnics, concerts, family, friends and barbecues? Personally I love firework displays, even though personal fireworks were illegal in Connecticut where I grew up, my family would often travel to Oklahoma during the first part of July and we got to experience poppers, firecrackers and roman candles.

Now that I’m grown I’m just as happy sitting on the grass watching someone else shoot off the pyrotechnics. The photo below was taken at the Omaha Memorial Park fireworks display after the concert in the park. I try and go every year and have seen Foreigner, Styx, Kansas, Huey Lewis and Pat Benatar in concert while sitting on a blanket and enjoying the summer sun.

Every year I attempt to take a memorable fireworks photo, one that isn’t just a sky full of color. This one of my favorites that not only captures the color in the sky, but the feeling of the spectators.

There are “safe” firecrackers and noise makers that are pretty much legal in all 50 states. So legal that Amazon sells them. So if you want to make a little noise on the 4th of July and have some safe fun check out the legal fireworks that will still impress the young at heart. Heck, I still like to throw poppers.

How to Cook Corned Beef

Even though I grew up in a heavily Irish area of Connecticut I never ate corned beef. So when my husband asked me to cook it, I was a little lost, he is part Irish and Corned Beef was a family tradition on St. Patricks Day. When I said I didn’t know how to cook it, and wasn’t planning on adding it to the menu a pout appeared and he mentioned driving home to his Mom’s. That wasn’t going to happen.

Cooking Corned Beef and Cabbage

So, I started asking around for recipes and my co-worker Kelly told me about this awesome recipe on, where else, Allrecipes. Have to admit, even for someone with no Irish heritage I did pretty well. On second thought, since I’m adopted, I don’t know what mix I am and the freckles that appear in the summer might have some “Touch of the Irish” , but I’d like to think I’m just a good cook.

I bought the already packaged and brined corned beef, I guess I cheated a little. I did learn a little trivia about corned beef. It’s not named because the beef are fed corn, but because the brisket was cured with corns of salt.

Corned Beef Recipe

Ingredients

  • 2 (3 pound) corned beef briskets with spice packets
  • 2 (12 fluid ounce) bottles beer
  • 2 bay leaves
  • 1/4 cup peppercorns
  • 1 bulb garlic cloves, separated and peeled (didn’t have, used freeze dried garlic)
 Directions
  1. Place the corned beef briskets into a large pot (I used a crock pot). Sprinkle in one of the spice packets, and discard the other one or save for other uses. Pour in the beer, and fill the pot with enough water to cover the briskets by 1 inch. Add the bay leaves, peppercorns and garlic cloves. Cover, and bring to a boil.
  2. Once the liquid comes to a boil, reduce the heat to medium-low, and simmer for 4 to 5 hours, checking hourly, and adding more water if necessary to keep the meat covered. (which I didn’t do, still turned out great)
  3. Carefully remove the meat from the pot, as it will be extremely tender. Set on a cutting board, and allow it to rest until it firms up a bit, about 10 minutes. Slice or shred to serve. I discard the cooking liquid, but it can be used to cook cabbage and other vegetables if desired.
Cabbage, Potatoes & Onions
  • 1/4 of a cabbage, cut into 1-2″ chunks
  • 1 onion cut into 1″ pieces
  • 4 potatoes, cubed
  • Olive oil
  • Butter
  • Salt & Pepper to taste
Directions
  1. Cube all ingredients and place in shallow baking dish
  2. Drizzle with olive oil and melted butter
  3. Liberally sprinkle with salt and pepper
  4. Bake for 45 minutes

Week 1: Happy New Year 2012

I’m going to try my 365 project again, but this year make it realistic and try the 52 Week project. I’ll still try and add extra postings in between as I learn more about my camera, have a recipe to post, or food pictures. But I’m setting myself up to succeed, with less stress.

Last year was my first 365 project and I made it to day 312 posting everyday, but then life got in the way. I still consider it a success.  I made some new friends, learned more about my camera and ultimately achieved my goal. I received a new camera. More on that later.

How to make a bacon and butter basted turkey for thanksgivingOne of my joys during the year is planning Thanksgiving dinner. My kids love eating my moist delicious turkey wrapped in bacon. You can find the recipe here.

I start shopping for Thanksgiving several weeks before the holiday. Why? Because shopping for Thanksgiving can be expensive. The biggest turkeys are gone first and who wants a 12 lb turkey? My perfect sized turkey is about 18-20 lbs.

What else is on my list as I’m preparing Thanksgiving dinner?

Here is my shopping list for Thanksgiving. This is mainly for my kids who someday will need to fix Thanksgiving for their families.

  • 18-20 lb Fresh Turkey
  • 1 lb of bacon
  • Two pounds of butter (need one lb just for the turkey)
  • Vanilla
  • 18 eggs
  • 2 prepared pie crusts
  • 2 tubes crescent rolls
  • 5 lbs of potatoes
  • 1 can of cranberry jelly
  • 3 boxes StoveTop Stuffing
  • 3 lbs apples
  • 3 lbs onions
  • 1 package of dried cranberries
  • Mushrooms
  • 3 cans of green beans
  • Cream of Mushroom soup
  • FRENCH’S Crispy Fried Onions.
  • Spices
    • Sage
    • Thyme
    • Lawrys Seasoning Salt
    • Grinder Pepper

When Is Thanksgiving?

It never fails. Every year I still get the question Mom? When is Thanksgiving?” Thanksgiving is ALWAYS the third Thursday of November kids. Look at your calendar. Now let me get back to planning thanksgiving dinner so you can feed your belly.

Thanksgiving Holiday Decorations

As I’m planning Thanksgiving I set the table the day before. It saves time and stress on Thanksgiving Day to relax and visit with family. I break out my China and good silverware.

 

Yes, I set a traditional Thanksgiving table. I put in all the leaves and gather chairs from all over the house. My family is small compared to friends with extended families.  Since our nuclear family is small, usually 6-8 people, we can all gather in the dinning room.

All the food goes on the table, the Turkey taking center stage and dishes getting passed. We don’t eat buffet style on Thanksgiving. I get a new tablecloth and napkins every Thanksgiving and it’s not easy to find a 72″ table cloth.

I’ve learned a few secrets to setting a large dining table. Use TWO Table cloths overlapping each other.

Veterans Day from a Military Mom

On this Veterans Day, I wish to salute my sons who have chosen to serve their country in the United States Marine Corps.

I know the Marines seem to be the proudest, and the Mom’s are just as bad. But there is a reason why they are called The Few, the Proud, The Marines.

They are the only branch of the service that once you go through Marine boot camp you can transfer to any other branch without going through boot, or basic again.

But every other service man wanting to transfer into the Marines must go through Marine boot camp. They train the hardest and the longest of any other branch. Thirteen weeks, followed by four weeks of Marine Combat Training (MCT)

From boot camp, to their uniforms, Marines are disciplined to pay attention to detail. Everything has a purpose, not that you are supposed to understand that purpose, but there is a trust in every command, every directive, that there is a greater purpose in mind. Here are a few pictures from my youngest son’s leave from boot camp in October.

He received the Expert Rifleman award, the highest marksmanship award given in boot camp. It is pined exactly an 1/8 of an inch above the left pocket. If you don’t have a ruler in your kit the width of two nickels will do.
