Honey-Lime Chicken Kabobs

More and more I turn to Pinterest for recipes. I think it’s a visual thing, I love pictures of food, just makes me hungry.  I had limes (left over from Margaritas) and I had honey, so into the Pinterest search I went for honey lime chicken and this is what I found, I call it Honey-Lime Chicken Kabobs, with my very own twist. Very easy and tasty. My only regret? I didn’t make more.

Honey Lime Chicken Skewers

Lime Chicken Kabob Recipe

Ingredients

  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon vegetable oil
  • juice of one lime
  • 2 garlic cloves, minced
  • 1-2 teaspoon Siracha (didn’t have any, left if out)
  • red pepper flakes, to taste
  • 2 tablespoon cilantro
  • 1 pound skinless, boneless chicken breasts

Instructions

  1. In a small bowl, combine your ingredients, through the cilantro. Mix thoroughly.
  2. Pour marinade over chicken breasts and turn to coat. Cover and allow to marinate for at least 1 hour. (I marinated overnight)
  3. Grill on medium high heat for 6 to 8 minutes per side, until juices run clear.

Grilled Pork Chops

Went to the grocery store and found these thick, center cut pork chops on sale for $1.99/lb, oh my are they delicious! Why in the world would you buy hamburger or ground beef for $3.49 a lb when you can grill a whole cut a meat instead. After liberally seasoning it with Patty’s Prime Seasoning and some pepper I threw it on a sizzling grill, seared it really nice then turned the heat down to let it cook.

Better than steak!

Day 92: BBQ Chicken

Just a simple and easy Friday night supper, oven baked barbecue chicken with mixed fruit for dessert. Tried something different this time. Normally when basting sauce onto unbaked chicken the sauce doesn’t stick. The moist skin won’t hold the barbecue sauce, and I like a LOT of sauce on my chicken.

COOKING TIP: Dust the chicken in flour before cooking, then baste with sauce before placing in the oven. Perfect! The flour gives a dry base for the BBQ sauce and even thickened it a little so a second coat could be added when I turned the meat at the half way point.  I will have to remember this for other basting sauces in the future.
