Day 22/365: Homemade Clam Chowder

New England Clam Chowder is one of my favorite soups, normally I open a can of Campbells Chunky soup, but since I’ve had success in making homemade soup I thought I would give it a try. Yes the recipe is below. Some of my favorite recipes are from Taste of Home and rarely do I follow a recipe to the letter and this was no exception.

The result was wonderful and was given the thumbs up from my friend Beth and my daughter.

Day 22: Homemade Clam Chowder

Nebraska Clam Chowder

  • 4 potatoes, cubed
  • 1 cup water
  • 1 cup chicken broth (or chicken bouillon cube and 1 additional cup water)
  • 8 oz Clamato juice
  • 1 med onion finely chopped
  • 1 celery rib, chopped
  • 1/4 cup butter
  • 1 tsp dried parsley flakes
  • 1/2 tsp pepper
  • 2 TBSp all purpose flour (cornstarch or whole wheat flour can also be used)
  • 1/2 cup cold water
  • 2 cans chopped clams (called for draining, I used juice)
  • 2/3 cup process cheese (Velvetta)
  • 1 can (12 oz) evaporated milk

In a large saucepan, combine the above ingredients. Bring to a boil. Reduce hear; cover and simmer for 20 minutes or until potatoes are tender. In a small bowl, combine flour and cold water until smooth. Stir into potato mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce hear. Add clams and cheese; cook and stir until cheese is melted. Stire in milk, heat through.

Yield: 9 servings

Feel free to add more potatoes, onions, chopped carrots, cheese,  other seafood, or dill according to your taste. Soup is wonderfully forgiving and invites creativity. If a thicker soup is desired use more flour or cornstarch.

Day 20/365: Christmas Wreath

Today was a day spent behind the computer, so I took the camera to my decorations and started experimenting with camera settings. There is an alternative motive. My living room is so dark and my normal Christmas Eve photos don’t turn out how I would like, so I have to figure this out in the next few days.

Seeing how I was a few days behind in my postings I figured out how to automate PhotoShop actions to save some time.  I still tweak a little, but automatically adding adjustment layers, sharpen filters, and resizing saves SO much time.

Day 19/365: Christmas Lights and Giant Snowman

I love driving around looking at Christmas lights. I had so many photo opportunities today that I really couldn’t decide which one to post for my 365 project.

But today the Snowman won out and it includes a bonus image. Mainly because I’m getting better at taking photographs in low light and was very happy with the results. So I’m celebrating!

 

Day 19: Giant Snowman

Every year the decorations get more elaborate and to me it’s never too much. I like lots and lots of lights, but I do have to caveat it though.

My husband thinks the house below is a little bit gaudy though. I’m in agreement there. It doesn’t coordinate, there isn’t a theme and it looks as if they just went to a garage sale, bought every random string of Christmas lights and put them on the house.

Day 19: Bonus, Christmas lights

Synchronized light shows set to music are my favorite and in just about every town you can find a directory to the local area light shows. Find the AM station on the radio, listen to the music in your car and enjoy.

Day 18/365: Ukrainian Ornament

A pysanka is a Ukrainian Easter egg. Yes I know this is Christmas, but they represent Christianity and hang on my Christmas tree.  I was fortunate enough to visit Germany and the Czech Republic several years ago and thought they were intricately beautiful.  As per tradition I gave several to family members and friends as a token of love and friendship.

Day 17/365: Poinsettias

A bit of festive cheer to continue the Holiday theme.

While out grocery shopping for Christmas I spotted this grouping of poinsettias in the floral department. They were so pretty. I told the floral lady what I was doing and she started setting up shots. I’m learning having my camera in my purse comes in handy.
