The Best Deer Jerky Recipe EVER!

You think I’m kidding? I’m not.  My sweet and spicy venison jerky recipe won Grand Champion at the County Fair in the entire canning and preserving class.

Make the best homemade jerky recipes that will win championships. Homemade sweet and spicy venison jerky marinade.

There is little I like more than homemade jerky. Seriously, it’s really the perfect food. It’s high in protein, low in carbs (a good thing for me) it’s tasty, lasts a long time and is just AMAZINGLY fantastic.  I hoard my jerky. Literally. I guard it passionately.

But, I will share my homemade jerky marinade recipes and process so you can make your own. There really isn’t any magic to the process, and like any recipe, it can be tweaked to your individual taste.

How to Make Homemade Jerky

The process of making homemade jerky takes about three days. Two days to slice, prepare, and marinade and one day to dehydrate. But it’s well worth it!

Step 1 – Select your meat: The best meat for jerky is lean with little fat. My husband saves me the rumps, and he uses the shoulders for his ground venison jerky.  If you are making beef jerky then the best meat for beef jerky is a nice large rump roast or round roast.

Step 2 – Slice meat 1/8-1/4″ thick. Half frozen meat will slice easier

I used to hand slice beef for jerky, and that works. But, your hand gets very tired after about 15 minutes. If you are making homemade beef jerky and buying a beef round roast from a meat case you can ask the butcher to slice it for you. There are still a few full-service grocery stores around. They usually have the best meat too.

The best and fastest way to make a large batch of jerky is with a high-quality meat slicer. The Chefs Choice 610 Slicer some of the best reviews. We received our slicer as a Christmas gift a couple of years ago and it’s WONDERFUL!! If you’re going to make jerky on a regular basis then invest good kitchen equipment and tools to do the job.

Step 3 – Place Slices into a deep storage container. Crisscross them leaving gaps where marinade travel and do its magic

Step 4 – Pour prepared jerky marinade 

Repeat steps 3 and 4 until the container is full. Then press the meat down and make sure it’s covered in the jerky juice marinade.

Step 5 – Marinade in the refrigerator for 24-48 hours

Step 6 – Dehydrate on high (160F) for approximately 4-6 hours

Lay your marinated jerky meat on the dehydrator trays close together. It will shrink as it dries. Depending on the thickness of your jerky and how much jerky marinade juice it soaked up will determine your drying time. You want the final product to be dry, but not too dry. It should bend just slightly without breaking. BUT, if it does get drier that’s okay too. It will still taste great. In fact, it will last longer as you have to suck on it longer to eat it.

Step 7 – Eat and Enjoy! Be prepared for friends coming out of the woodwork asking for jerky. Giving you meat to make into jerky, loaning you their dehydrators because they can’t make it as good as you do. Yes, it’s happened. I put their dehydrator in the garage and use mine.

The Best Dehydrator for Jerky

Seriously, the best dehydrator for jerky is the Nesco Gardenmaster Dehydrator.  Don’t use any other kind. I have tested about 5 different ones, you will be VERY disappointed if you use any other brand.

The heater and fan are on TOP of the Nesco Gardenmaster Dehydrator, which is VERY important. This pushes warm air down through the center tunnel and racks assuring an even airflow. There is no need to rotate racks. The jerky dries evenly. Our Nesco dehydrator is going on fifteen years old and is still going strong. Really any of the Nesco professional dehydrators will do a good job.

Don’t skimp on a jerky dehydrator. If you find a “bargain” with a heater or fan on the bottom, walk away. Think about it, you don’t want the jerky marinade to drip on the heating unit.

Packaging Jerky – Bags and Labels

Normally I use freezer quart bags and store my jerky in the deep freeze. It is rare that I give away my homemade jerky. But occasionally I do put them in my Christmas baskets and boxes. It’s then that packaging is important.

This is label can be ordered on Etsy and I’m sure you can ask the artist for a venison jerky label too.

Homemade Jerky Recipes

My best deer jerky marinade recipes start with a base blend. I then adapt it depending on what I feel like.  I started with the Sweet and Spicy Venison jerky and spun off from there. A lot of this has been experimentation, but without fail it came out delicious every time.  The base blend of marinade will cover approximately 4-5 lbs of meat.  If you have marinade leftover that you haven’t used store it in the refrigerator for your next batch.

Venison Jerky Marinade: (Base )

  • 30 oz Worchestire Sauce
  • 15 oz Soy Sauce
  • 2 TBSP Garlic Powder
  • 1 TBSP Lowry’s Seasoning Salt
  • 1 TBSP Onion Powder
  • 1 TBSP Black Pepper
  • 1 tsp Liquid Smoke

(Championship) Sweet and Spicy Venison Jerky

  • Base Blend
  • 1/4 Barbeque Sauce
  • 1/4 Honey
  • 1 TBSP Chilli Powder

Teriyaki Jerky Recipe

  • Base Blend
  • 10 oz Teriyaki Sauce
  • 2 TBSP Crushed Garlic

Venison Sweet Hot Jerky Recipe

  • Base Blend
  • 1/4 barbeque sauce
  • 1/4 cup Jalapeno Jelly (I use my own recipe)
  • 1 TBSP Chilli Powder

Spicy Hot Jerky Recipe

Now I’m warning you if you do NOT like hot and spicy then do NOT try this! 

The longer you marinade this the hotter the jerky. Let this sit for two days and age.  I don’t like super hot jerky, heck I don’t even like hot jerky. When I licked my fingers after I got some marinade on my fingers it set my lips on fire. I much prefer my Sweet and Spicy Venison jerky more. The chili powder is just enough for my tastes buds.

  • Base Blend
  • 1 TBSP Chilli Powder
  • 2 TBSP Habanero Pepper Flakes
  • 2 TBSP Daves Gourmet Scorpion Pepper Hot Sauce

Cabela Jerky Recipe

Since I live in Nebraska a lot of people ask me if this is the Cabela jerky recipe. I’ve tried it. But, I like mine better mainly because of the liquid smoke and the garlic.  But if you have been searching for the Caela jerky recipe here it is for you to try.

  • 3 lbs venison (or beef)
  • 1/2 cup soy sauce
  • 1/2 cup Worcestershire sauce
  • 2 tsp Accent seasoning
  • 2 tsp table salt
  • 2/3 tsp onion powder
  • 2/3 tsp black pepper

I can’t tell you how many times I’ve been asked for this low carbs blueberry muffin recipe.

If you are on a low carb diet, either due to your own personal choice or Diabetes (Type 1 or Type II diabetes) then you understand the struggle in finding low sugar, low carb foods you enjoy. This low carbs blueberry muffin will make you rethink low carb food.

I found a super moist low carbs blueberry muffins recipe that is super easy and is LESS than SIX ingredients.

Seriously Low Sugar Blueberry Muffins That Taste Good!

You don’t even miss the added sugar.

Cooking low carb meals for diabetics is challenging. But once you get the hang of finding alternative sweetening ingredients it’s not really that hard. Even if you are not diabetic a low sugar, low carb diet is healthier for anyone.

There is no need to deprive your children of snacks and treats. You can get your kids to love low carb diabetic meals and not even know they are missing anything.

When baking is easy its fun. This low carb recipe is easy to memorize. To make baking easy and fast I keep my tools nearby and handy. I don’t skimp on measuring cups or spoons either. A friend showed me the stainless steel measuring cups in the photo and I love them. I will never go back to plastic measuring utensils again.

Why? Because professional kitchen cooking tools make a difference. Metal utensils don’t bend when scooping shortening or peanut butter.

But I digress…

There is nothing worse than a dry muffin. You get halfway through eating your breakfast and dry mouth sets in, then you want a glass of milk (which is not carb friendly) and your low carb breakfast is already toast, (yeah, can’t have toast either).

How do you avoid dry muffins? The secret is moist ingredients. That means low carb ingredients. That means no flour to soak up the moisture. The other secret ingredient is vinegar.

Yup, I said it vinegar. When you add vinegar in the wet ingredients to the baking soda in the flour mixture it becomes baking magic. Ok, not magic, but baking science.

These easy moist blueberry muffins will be your families favorite and you will quickly memorize the recipe. It’s THAT easy.

So here it is. Get ready, it’s pretty easy. You will always want to stock bananas and frozen blueberries in your freezer. Or fresh if they are in season. They are one of the low carbs, no sugar snacks diabetics can eat since blueberries are on the low glycemic food list.

  • 3 large eggs
  • 3 Ripe bananas
  • 3/4 Cup Almond Flour

  1. Preheat oven to 350F, grease muffin tins (I spray with Pam, it’s easy and fast)
  2. Mash bananas in a medium bowl
  3. Add eggs one at a time and mix
  4. To wet ingredients, add vinegar and vanilla
  5. Add baking soda to almond flour, blend and whisk
  6. Fold flour mixture into wet mixture (this means DO NOT beat, gently mix)
  7. Fill muffin tins 3/4ths full
  8. Press blueberries onto the top of the muffins
  9. Bake for 20 minutes

It’s happened: your child has decided to enlist in the military.

This decision brings with it a mixture of anxiety surrounding the unknown as well as an eagerness to support them in their journey.

5 things to remember when your child enlist in the military

Balancing these emotions can certainly be difficult. Even with all of the resources that we have available to us in this modern age, it is hard when your child tells you they want to enlist in the military.

By focusing more on the positive aspects that will coincide with your child’s enlistment, you are more apt to approach the situation from an optimistic, mindful standpoint. After all, it is certainly not “bad” news!

Your child is about to embark on an honorable journey that will leave them more disciplined, educated, and well-rounded than they were before they left. Below are some key encouraging points to keep in mind when coming to terms with your child’s enlistment:

1. Advancements in technology equate to more communication.

Your son or daughter may not be able to consistently communicate with you during training. However, there are many ways to keep in touch with them during their time on base.

Tips on how to handle the news when your child tells you they are enlisting in the military

Although many military personnel still love getting snail mail, innovative technology gives us a variety of options to thoroughly communicate. Whether it be video chatting, e-mail, texting, or even engagement on social media, you are sure to have the means to communicate on various platforms.

It is important to note that internet access is not always reliable, especially overseas.  But most military personnel do have the ability to check in with their family to ease their worries at fairly regular intervals.

2. Enlistment opens the door to free education.

Thanks to the Post-9/11 GI Bill, military personnel are eligible for up to $50,000 toward their education costs.

These funds can go toward college coursework, vocational classes, on-site job training, and even tutoring resources, if necessary. The only stipulation is that they have to adhere to the payment obligations that are set forth during their first year of service.

We all know how student loan debt can often hold individuals back for a long time before they have access to financial freedom.

Having the military pay for your child’s education fully, or even partially, is a fantastic benefit that will serve them well over their lifetime.

3. Your child will never worry about job security.

Wondering if our children will have financial independence and stability when without us is easily at the forefront of our minds as parents.

Staying positive when your child enlists in the military. Military provides opportunities for young men and women they would never have in the civilian world.

Enlisting in the military gives your son or daughter the ultimate job security due to the nature of the contracts that recruits sign. This binds them to their service for a set period. It is very rare for personnel to be fired unless the reasons approach treason, corruption, or some other seriously heinous act.

As an active duty military member, your child will receive a dependable salary along with compensation for amenities such as rent, utilities, and even fuel costs. This is much more than what most young adults gain directly upon finishing school.

Some struggle with securing these needs for their entire lives. You can find peace in knowing that your child will not.

4. Healthcare is always within reach.

Military personnel are offered policies by a company called TRICARE which gives them access to free or affordable healthcare, including dental. Situations, where they may need an ambulance, will be completely covered and should never result in hefty bills or other unexpected healthcare costs.

The military relies on the strength and well-being of its service members; therefore, the best care is available to them to keep them up to high military standards!

Knowing that your child’s health will always be a priority is imperative to any parent. Military personnel are provided with inexpensive or free care with military-specific HMO plans.

5. Support groups are always available.

Staying positive when your child enlists in the military.If you’re ever feeling like you need to talk with others who understand, there are many support groups, both online and locally-based, that can meet you with the empathy that you need.

Other military parents can give you insightful tips. Like avoiding too much media consumption! They also provide reassurance like knowing that you will be first to be notified if anything should go wrong.

They’ve been there, done that, and know the drills. Hearing tips from someone who is in your shoes, or has been in the past, will give comfort. Sometimes you just need someone to give you peace of mind.

It is normal to feel a sense of fear and uncertainty when your child is about to enlist. These emotions are warranted. However, it is important to realize the significant benefits that go along with your child building a future involving the military.

While we live in an era where we have access to unlimited forms of support and resources it sometimes makes it even scarier. Even the most uncertain times can become a bit more bearable with the right tools and support.

Heaven and earth have touched. God and man are united together in the person of Jesus, born of Mary on Christmas day

Christ the Savior is born. Not Christ the judge or enforcer. Christmas is the day that exclaims that God is not just “out there”, but He is here with us, amongst us. Immanuel, meaning God with us. God in the flesh.

That is still true today. You will find Him at the baptismal font, in the Last Supper during communion, in the Word spoken by the pastor during the Gospel and throughout the Divine Service. He is found here on earth on those who hold Jesus in their heart.

He demonstrates His love through his people who give their gifts to those around them. Christ the Lord is inside the hearts of caregivers, Mothers, Fathers, teachers, doctors, police officers and all those who remember the love and forgiveness given through grace.
