You think I’m kidding? I’m not.  My sweet and spicy venison jerky recipe won Grand Champion at the County Fair in the entire canning and preserving class.

Make the best homemade jerky recipes that will win championships. Homemade sweet and spicy venison jerky marinade.

There is little I like more than homemade jerky. Seriously, it’s really the perfect food. It’s high in protein, low in carbs (a good thing for me) it’s tasty, lasts a long time and is just AMAZINGLY fantastic.  I hoard my jerky. Literally. I guard it passionately.

But, I will share my homemade jerky marinade recipes and process so you can make your own. There really isn’t any magic to the process, and like any recipe, it can be tweaked to your individual taste.

How to Make Homemade Jerky

The process of making homemade jerky takes about three days. Two days to slice, prepare, and marinade and one day to dehydrate. But it’s well worth it!

Step 1 – Select your meat: The best meat for jerky is lean with little fat. My husband saves me the rumps, and he uses the shoulders for his ground venison jerky.  If you are making beef jerky then the best meat for beef jerky is a nice large rump roast or round roast.

Step 2 – Slice meat 1/8-1/4″ thick. Half frozen meat will slice easier

I used to hand slice beef for jerky, and that works. But, your hand gets very tired after about 15 minutes. If you are making homemade beef jerky and buying a beef round roast from a meat case you can ask the butcher to slice it for you. There are still a few full-service grocery stores around. They usually have the best meat too.

The best and fastest way to make a large batch of jerky is with a high-quality meat slicer. The Chefs Choice 610 Slicer some of the best reviews. We received our slicer as a Christmas gift a couple of years ago and it’s WONDERFUL!! If you’re going to make jerky on a regular basis then invest good kitchen equipment and tools to do the job.

Step 3 – Place Slices into a deep storage container. Crisscross them leaving gaps where marinade travel and do its magic

Step 4 – Pour prepared jerky marinade 

Repeat steps 3 and 4 until the container is full. Then press the meat down and make sure it’s covered in the jerky juice marinade.

Step 5 – Marinade in the refrigerator for 24-48 hours

Step 6 – Dehydrate on high (160F) for approximately 4-6 hours

Lay your marinated jerky meat on the dehydrator trays close together. It will shrink as it dries. Depending on the thickness of your jerky and how much jerky marinade juice it soaked up will determine your drying time. You want the final product to be dry, but not too dry. It should bend just slightly without breaking. BUT, if it does get drier that’s okay too. It will still taste great. In fact, it will last longer as you have to suck on it longer to eat it.

Step 7 – Eat and Enjoy! Be prepared for friends coming out of the woodwork asking for jerky. Giving you meat to make into jerky, loaning you their dehydrators because they can’t make it as good as you do. Yes, it’s happened. I put their dehydrator in the garage and use mine.

The Best Dehydrator for Jerky

Seriously, the best dehydrator for jerky is the Nesco Gardenmaster Dehydrator.  Don’t use any other kind. I have tested about 5 different ones, you will be VERY disappointed if you use any other brand.

The heater and fan are on TOP of the Nesco Gardenmaster Dehydrator, which is VERY important. This pushes warm air down through the center tunnel and racks assuring an even airflow. There is no need to rotate racks. The jerky dries evenly. Our Nesco dehydrator is going on fifteen years old and is still going strong. Really any of the Nesco professional dehydrators will do a good job.

Don’t skimp on a jerky dehydrator. If you find a “bargain” with a heater or fan on the bottom, walk away. Think about it, you don’t want the jerky marinade to drip on the heating unit.

Packaging Jerky – Bags and Labels

Normally I use freezer quart bags and store my jerky in the deep freeze. It is rare that I give away my homemade jerky. But occasionally I do put them in my Christmas baskets and boxes. It’s then that packaging is important.

This is label can be ordered on Etsy and I’m sure you can ask the artist for a venison jerky label too.

Homemade Jerky Recipes

My best deer jerky marinade recipes start with a base blend. I then adapt it depending on what I feel like.  I started with the Sweet and Spicy Venison jerky and spun off from there. A lot of this has been experimentation, but without fail it came out delicious every time.  The base blend of marinade will cover approximately 4-5 lbs of meat.  If you have marinade leftover that you haven’t used store it in the refrigerator for your next batch.

Venison Jerky Marinade: (Base )

  • 30 oz Worchestire Sauce
  • 15 oz Soy Sauce
  • 2 TBSP Garlic Powder
  • 1 TBSP Lowry’s Seasoning Salt
  • 1 TBSP Onion Powder
  • 1 TBSP Black Pepper
  • 1 tsp Liquid Smoke

(Championship) Sweet and Spicy Venison Jerky

  • Base Blend
  • 1/4 Barbeque Sauce
  • 1/4 Honey
  • 1 TBSP Chilli Powder

Teriyaki Jerky Recipe

  • Base Blend
  • 10 oz Teriyaki Sauce
  • 2 TBSP Crushed Garlic

Venison Sweet Hot Jerky Recipe

  • Base Blend
  • 1/4 barbeque sauce
  • 1/4 cup Jalapeno Jelly (I use my own recipe)
  • 1 TBSP Chilli Powder

Spicy Hot Jerky Recipe

Now I’m warning you if you do NOT like hot and spicy then do NOT try this! 

The longer you marinade this the hotter the jerky. Let this sit for two days and age.  I don’t like super hot jerky, heck I don’t even like hot jerky. When I licked my fingers after I got some marinade on my fingers it set my lips on fire. I much prefer my Sweet and Spicy Venison jerky more. The chili powder is just enough for my tastes buds.

  • Base Blend
  • 1 TBSP Chilli Powder
  • 2 TBSP Habanero Pepper Flakes
  • 2 TBSP Daves Gourmet Scorpion Pepper Hot Sauce

Cabela Jerky Recipe

Since I live in Nebraska a lot of people ask me if this is the Cabela jerky recipe. I’ve tried it. But, I like mine better mainly because of the liquid smoke and the garlic.  But if you have been searching for the Caela jerky recipe here it is for you to try.

  • 3 lbs venison (or beef)
  • 1/2 cup soy sauce
  • 1/2 cup Worcestershire sauce
  • 2 tsp Accent seasoning
  • 2 tsp table salt
  • 2/3 tsp onion powder

  • 3 large eggs
  • 3 Ripe bananas
  • 3/4 Cup Almond Flour
  • 1/2 Cup Blueberries (frozen or fresh)
  • 1 tsp baking soda
  • 1 tsp white vinegar

  6. Fold flour mixture into wet mixture (this means DO NOT beat, gently mix)
  7. Fill muffin tins 3/4ths full
  8. Press blueberries onto the top of the muffins
  9. Bake for 20 minutes

This is a quick peanut butter cookie recipe you can quickly mix and bake. 

I then pack them in cookie tins and mail cookies to friends and family all over the United States.

How to Ship Cookies for Mailing

The best way to pack cookies for shipping is tight and snug so they can’t move around. I use tissue paper and line cookie gift tins. The I fill the tins and use the tissue paper to fill in the empty spaces around the treats. Everyone tells me they arrive just fine.

I usually make at least six different varieties of cookies every year, not including my candies. This tradition started when I moved from Connecticut to Oklahoma for school and was looking for an inexpensive gift to send to friends.

Another reason I started making peanut butter cookies is one year I ran our of flour and these have three ingredients: peanut butter, sugar, and an egg. So not only inexpensive to make is also a simple gluten free cookie recipe for a friend who is gluten intolerant.

Recipe for Peanut Butter Kiss Cookies

I have my favorite Pampered chef baking pan that LOVE to bake cookies on. WHY? The baking stone evenly bakes the cookies and doesn’t over brown the bottoms. Most metal cookie sheets get too hot and the bottoms of the cookies burn too easily.

Preheat oven to 350F, unwrap candy kisses

  • One Cup Peanut Butter ( I use smooth)
  • 1 Cup Granulated Sugar
  • Large egg (1)
  1. Mix together, roll teaspoon-size balls, I use a melon scoop for uniform size balls
  2. Place on cookie sheet and bake for 10 minutes
  3. Remove cookies from oven and immediately place an unwrapped Hershey Kiss into the cooked ball.
  4. Cool slightly and remove from baking sheet.
  5. Place on wire cookie rack until completely cool.

There you go, so easy a child could do it, and who doesn’t like peanut butter and chocolate? M&M Christmas Pretzels, a Holiday Tradition

In addition to Christmas cookies, I also make Christmas pretzels, AND I do it the easy way.

It used to be hard to find circle pretzels, but most groceries stores have them now during the holidays. Where to get circle pretzels the rest of the year is the challenge.

Fill circle pretzels with almond bark and plop an M&Min the middle. Years ago it was difficult to find circle pretzels, there was a hunt to find them in the grocery stores.

Now they are everywhere. I used to dip the regular twisted variety, but that takes too much time.

Mint Christmas M&Ms are even available!!

Hershey holiday M&Ms come in red and green and are perfect to give your cookie and candy plates that splash of color.  Simply spoon the melted chocolate into the center of the pretzels.

You can also use a frosting gun to squirt the melted almond bark into the pretzel centers.

Why Use a Double Boiler?

Many people chose to microwave their chocolate, but I think it’s too risky. It doesn’t take too much heat before the chocolate gets too hot, seize up and become hard.

I don’t get fancy with melting chocolate, almond bark is fine with me and I place the squares on a double boiler on the stove. The chocolate is double boiler melts slower and there is no risk of burning or the chocolate separating.

How to Use a Double Boiler

A double boiler is easy to use. It’s basically a metal bowl or pot placed over a boiling pot of water.  Put about an inch to 2 inches of water in the bottom pan and place your melting chocolate in the top pan.

Turn the stovetop to medium-low and your chocolate melts slowly into perfect liquid chocolate.

I’m off to dip pretzels now, you see, nothing is safe during the Christmas season when it comes to chocolate, I make more than Christmas Pretzels, I make pretzel rods, chocolate-covered cherries, chocolate covered marshmallows, and chocolate-covered apricots.

My Favorite Turkey Stuffing Recipe

Some foods I cook from scratch, other have a little bit of help, and I deviate from the script. My favorite turkey stuffing recipe varies every year, depending on what I have in my refrigerator and cupboards. But regardless, it always comes out delicious and there is never enough for left over “turkey plates.”

How to Dress up your Turkey Stuffing
Start with Stove top Stuffing as a base

Yes, it’s cheating in a way, but I’m brand loyal and Stove Top stuffing has amazing flavor, the seasonings are already mixed in so I don’t have to guess. But I don’t stop there, I chop 3-4 of the following added ingredients and add them to the pot.

Just follow the ingredients on the box.

  1. Add water and butter to a large saucepan, bring to a boil.
  2. Turn off burner
  3. Add breadcrumbs from box
  4. Remove from heat
  5. Add 1-2 cups “EXTRA” ingredients and quickly mix with fork
  6. Cover and let sit for 30 minutes

Stuffing Additives

  • Onions
  • Celery
  • Mushrooms
  • Dried cranberries
  • Apples
  • Dried cherries
  • Walnuts
  • Chestnuts

I normally add about a 1/4 cup of each ingredient to my turkey stuffing, notice I said ABOUT, I don’t measure I just chop until it looks good. If you don’t like apples, leave them out, but it does give a nice sweet flavor to the stuffing. They cook down soft, so most people don’t even notice.

 

Baking Your Turkey

Homemade turkey stuffing recipeYes, there is a debate on whether you should bake your stuffing inside the bird or separately. This is mainly due to “safety” reasons. I bake my turkey with the stuffing inside, the turkey drippings add an amazing flavor which unmatched by just stove top cooking.

What is important to remember is to fully cook your turkey, then when you think he’s done, leave it in for 15 more minutes. Since I only use a giant roasting pan once a year I don’t own a “real” metal roaster. I buy the disposables at the grocery store and reuse them to make Chex Mix for the Christmas season. I do have a “real” metal baster though. Plastic turkey basters have a way of somehow touching a really hot service and getting a hole burned into the syringe. Then they don’t work.


Back to the stuffing. Use a large serving spoon and pack the stuffing inside the main body cavity and under the neck flab, just lift and tuck, lift and tuck. (Sounds like an exercise doesn’t it)

Place frozen pats of butter under the skin

Lift the bird and spoon the stuffing way down inside the body cavity. Pack it full. If the stuffing is sticking out the back end of the turkey, that’s ok. It will get nice and crispy and is perfect for snacking on when you take the turkey out of the oven.

 

After all of your stuffing has disappeared into the turkey, then proceed to season the outside, slip some butter under the skin and cover with bacon. Yup I make a bacon wrapped turkey. If you’re into that type of thing.

I should fix more stuffing throughout the year. Turkey stuffing isn’t just for Thanksgiving and there are a lot of recipes to use with chicken and pork chops. Maybe I’ll venture beyond just stuffing at Thanksgiving.
